Refrigerating Vs Freezing Vs Leaving Out

Hello
I need to make 250 cupcakes for the 18th of December and am working on a timeline for this project. Do I have to refrigerate or freeze cupcakes once baked and decorated? Can I leave them out? How long can you leave them in a box. I am planning on using a cake mix for the cakes. I will be decorating some with buttercream, and some with fondant. Is there a rule of thumb? I dont have enough space in my fridge or freezer for all the cupcakes and was thinking of putting them in a box and into my (non-insulated) shed, keeping the window open (the weather is pretty cold here in Montreal lol)

i would think that they would be just fine in the box as long as it is sealed. I have 300+ cupcakes coming up in my future and i was going to do the samething thing!

I recently made an order of 90 cupcakes and was also on a time line because I had other orders due the same weekend. I made my cupcakes a day and a half before I needed them. I iced them the day before and left them inside their boxes on the counter until delivery. There were no complaints regarding dryness etc. I've heard putting them in the fridge will cause them to dry out, just fyi.

Kandy, what do you mean sealed? I have corrugated boxes with lids, or are we talking sealed from air completely?

If you're going to freeze cupcakes, I'd freeze them before you decorate them.

I heard (and found this to be true) that if you freeze, when they are thawed, the cuppies will pull away from the wrapper. Not good lookin', unless you intend to ice over the gap.

Just as an FYI, I did freeze the cupcakes and once they thawed, half of them jumped out of their skins and decided they didnt want to live in their liners lol. Since when do cupcakes have a mind of their own??

I keep my cupcakes in a plastic container. They are still lovely after 5-6 days with or without the icing. I will deliver after 2-3 days but usually keep some leftovers for my grandchildren. Sometimes when its very humid some of the edges come loose but I just stick them with a litte BC.
