I just make a batch of mmf, and it's way too thick. Is there any way to fix it? Add more marshmallows? More liquid? Corn syrup? Something? Interestingly, I've made this recipe before with no problems at all, so I'm not sure what happened this time.....

I'm googling, and it looks like my problem is not fixable. Guess I'll have to make another batch....

The recipe I use calls for 16 oz of marshmallows. I have to be careful to make sure that I don't accidentally use the 10.5 oz bag. If you did, just melt 5.5 oz or 1/2 of another 10.5 oz bag and add them to the mixture. Maybe that's what is wrong.

Not sure what you mean by too thick...even if you used less marshmallows all you have to do is use less powdered sugar when you mix it in. I make half batches all the time using 8oz of marshmallows and 1tsb of water instead. Or did you use the other recipe with the corn syrup and all that? That one is a bit too complicated for me. Hope your second batch turned out ok...if you figure out where you went wrong please post it?

thanx!

I just made 18 pounds of it a couple of days ago. I could only find the 10 oz. pkg. of marshmellows, so I weighed out the amounts for each batch - no problems.

Just knead in a generous amount of crisco/shortening and you'll be fine. With MMF you must be careful with the PS. Depending on the time of year, humidity, temperature and so on it will require different amounts of PS. Add it half a cup at a time and stop while the MMF is still sticky and relatively soft. Rest for a couple of hours or preferably over night. Then knead in more PS when you take it out until you reach required consistency.

That's exactly what I do, sometimes the smaller bags are on sale and a much better deal.
