I found this image...not as detailed(THORNY) as real ones, but it may help you figure out how to make them...
as shown at

Is it possible to somehow use the same technique as done on this cake...

or this cake...

to make the bulbous part of it?

I'll give some thought to the top on how to keep it all edible and without using something like embroidery floss...
To make the baulbus part make a ball/cone of sugar paste hollow out a little then with fine nail scissors and starting at the base make fine snips pulling scissors upwards as you go.
Thanks all4cake for all your trouble. I think I would use cotton as the purple part and try and follow the thistle spray picture you posted. Thank you so much
I bet it could be made just as nicely(the bulbous part) with royal icing and an itty bitty leave tip....then, dip a ball tool in cornstarch to create a recess (to receive a wire with the colored threads attached) make hole in center with toothpick then leave to dry. When dry, squeeze a bit of royal icing into recess and insert wire into hole created by toothpick and secure at bottom with a ball of gumpaste and allow completed assembly to dry....just another thought...
