I am looking for a good cookie recipe to use that we can use cookie cutters on. I have yet to find a sugar or butter type one that is easy to use and tastes good!! I also wondered about any spice/gingerbread ones....I love stuff like that.

The NoFail Sugar Cookie one from this site is great. Just be prepared to add a little flour depending on where you live and the humidity. The first time I tried, it was either really humid or I didn't measure the flour right and the dough was very sticky and impossible to use. I tried again, testing the consistency and adding a little more flour as needed and have had no further problems with it.
