I was lucky enough to be in a discussion about the quest for CCC perfection a while back. Alton Brown did a show called "Three Chips for Sister Marsha" where he of course goes over all of the science behind, puffy, chewy and thin varieties. I swear by his 3 recipes now! Here are the Recipes and a link to the show transcript (which I read because I missed the actual show, and I'm a dork) Anyhow the cookie names tell you the results to expect and they work! I just adore Alton icon_smile.gif

If you want a soft chewy chocolate chip cookie try adding 2 tsp. cornstarch to your recipe. I just love the recipe I use now and it only has brown sugar in mine. icon_smile.gif

Kerry_Kake - would adding cornstarch be equivalent to using cake flour instead of AP?

Thanks cakesdivine. I'll try your recipe in the future. I have a recipe that I like and to keep the cookies soft and moist I add a small pack of vanilla pudding. I'm always open to trying new tried and true recipes.

I don't think it would be the same thing.
You know when you make Pavlova? It's the adding of the cornstarch that makes the soft chewy center and so it works for the cookies. I got this off of the show "Sugar".

1 cup brown sugar
1 cup margarine
2 eggs
1 tsp. vanilla
2 cups flour
2 tsp. cornstarch
½ tsp. salt
1 tsp. baking soda
2 cups chocolate chips

These are my favorite! I used to use the one with the vanilla pudding in it until I discovered this icon_biggrin.gif

Sounds great! Thanks for sharing.

I've always used the Better Homes chocolate chip recipe. I did tweak it though. I use 8 different kinds and brands of chocolate with extra added from the original recipe. I love it, so chewy and ohhh soo good.

I'm with andpotts - the Alton Brown The Chewy recipe is AWESOME!!

I always just use the toll house recipe, half butter half shortening....and don't overbake. Soft and yummy!

I always use the receipe off the Golden Crisco box. My mom uses it too so its a good childhood memory. They stay soft and chewy. Favorite among all my friends and fam.
