How Far In Advance Can I Make My Cake?

How many days before you need your cake do you make it? I have two small kids so I can't always make my cake from start to finish all in one day. Can I make the cake a day or two before I need it? Or are there other prep things I can make to cut down on time? I don't want a dry cake so I didn't know how many days I had to either do the cake or the icing or fondant accents. Thanks!

You can make cakes as much as one month in advance if you wrap it well in plastic wrap and freeze it.
Yes if you don't want to fz it, you can make it up to 2 days before.
Prep things? Sure; make your icing. Make any flowers or other decor being used. Depending on what is made and what type of icing used these can also be made as much as a month ahead. If you want the fondant accents to remain soft, cover them w/plastic wrap in a air tight container.

i agree with JuneBugBaby i try and make my cakes as close to the day as possible to keep them as fresh as possible, i have not used a frozen cake as yet.. I make all my decorations, accents, numbers well in advance so that once the cake is ready it does not take long to put it together.. Make sure you have all your ingredients/ fondant and tools ready. I've baked two weeks in advance, and frozen. But I try to get ALL cakes in the freezer for a day or two.

I normally bake two or three days out. But definitely no more than that.

When you say as much as a month in advance do you mean cakes tiers that have already been crumb coated and buttercreamed?

Just the plain cake layers usually.
One can fill, crumb coat and fz if the filling is fz'r o.k.
I don't like to b'cream until ready to decorate. In the fzr, even w/care, cakes can get dings and dents in them. I'd rather do the icing just before time to deliver.
You can make the icing and fz it. You can bake the cakes and fz them. It cuts down on the time needed to complete the cake. Lots of reasons, the holidays the least of them, will decide if you bake ahead or not.

The sooner you get started, the better. I usually bake no more than 3 days in advance and freeze. I have found that for me, a frozen cake is easier to ice and decorate. Make a list of all of the components of the cake and do them as far in advance as you can, breaking down the steps really destresses me.

How long is the fondant good for? Like if I do a flower or other decorations, how long are those good for? Do you leave them out or put them in the fridge/freezer? I might try a frozen cake just to see how that works out, are they dry? Do you defrost them before icing? Sorry for all the ?'s kinda new! icon_biggrin.gif

:D Don't put your cake in the fridge or freezer once it's coated with fondant. It tends to 'sweat' and will ruin your cake. On the counter in a cool spot is fine.

AAll of my cakes go in the fridge. I couldn't possibly do what I do without storing them there, with fondant and everything.

I also put my fully decorated cakes in the fridge (including gum paste flowers).  I do box them up and seal the edges to keep the humidity out.  I leave the cake in the box for about 2 hours after I take it out of the fridge.   I have never had a problem.
