So, I was at Ocean State Job Lots this weekend, and picked up a few packages of Italian Amaretti cookies. OMG - these are amazing! Crispy, meringue like, and so yummy. They are light as air and so addictive. Perfect for my holiday baskets. But, I can't find a recipe anywhere! Does anyone have one, or any ideas on adapting an existing recipe? The ingredient list is eggs, almond flour, corn flour, wheat flour, sugar, and leaveners.

This is the recipe I use(This was a winner from a Martha Stewart Cookie Contest several years ago)

It has become a family favorite.

Bonnie's Amaretti




Ingredients:
4 cups slivered almonds
2 cups granulated sugar
4 large egg whites
1 teaspoon pure almond extract
Confectioners' sugar. for dusting

Directions:
1. Line 3 baking sheets with Silpats(French nonstick baking mats) or parchment paper

2. Grind almonds with granulated sugar in a food processor until fine.   Transfer to a medium bowl.   In the bowl of   an electric   mixer using the whisk attachment, beat egg whites until stiff peaks form.   Add almond extract.   Gently stir egg white mixture into almond mixture to form a thick paste.

3. Drop dough by rounded teaspoons onto prepared baking sheets, about 1-1/2 inches apart.   Dust with confectioners sugar, and let stand at room temperature to dry for 2 hours.

4 Place rack in center of oven and heat oven to 300 degrees.   Transfer sheets to oven, and bake amaretti until edges are golden and cookies are firm, 20 to 25 minutes.   Remove cookies to a wire rack to cool.   Dust with confectioners sugar.   Repeat with remaining cookies.

Number Of Servings:Makes about 5 dozen
