Need Fondant Recipe That Works Well With Louisian Humidity

I have a fondant recipe that worked well when I used it in Utah. Now that I'm trying to use the same recipe in Humid Louisiana and it's not working. Comes out very soft and extremely stretchy. I tried adding more powdered sugar but then it becomes too brittle. HELP PLease.

Have you tried MMF? It works well for me in the humidity down here.
