How To Colour Chocolate?

I was wondering what type of food colour i should use to colour white chocolate?

Can I use the wilton gel pastes? or does it have to be special colouring?

Yes, you can color white chocolate with food coloring. It's best not to use coloring that is water based, though.

Chocolate does not like water and you may have a problem with it seizing up and becoming unmanageable.

I recommend the Wilton candy colors.

What Shades said. You cannot use the same food colouring you use for BC, because it's waterbased. I also use the Wilton Candy Melts colourings when I can't get coloured choc disks.

But if you're looking for something you can create by combining pre-coloured choc, try that first. Coloured choc disks are just pre-coloured white choc. I get mine from The Bulk Barn (for our non-Cdn friends, it's a bulk food store chain). The Wilton stuff can get expensive, especially if you're making black.

yea i dont have bulk barn in edmonton.

And the wilton candy melts are just too expensive... thanks for the help

you can use the waterbased colors, but you have to add in a little bit of cocoa butter as well. Melt the cocoa butter first, then add the color into the chocolate. If you notice it seizing, add in a little cocoa butter, this will fix the seizing. If you don't have access to cocoa butter, you can use melted shortening as well.

Another way to color chocolate is luster/petal dust...works well.

I have colored white chocolate with regular water based colors as well. I melted the chocolate and then stirred in a little bit of veg. oil (I used safflower oil). When the choc. and the oil was combined I added gel colors with no problem. First time I tried to color white choc I did not use any oil and had a disaster and had to throw it all away, then I experimented with the oil.
