I am making a sheet cake 18 X 12 X 2 today, and would like to have three layers. I am not very good at torting, and don't want to ruin my cake. I have a Wilton leveler. I would love any advice you could give on how I should go about getitng three layers out of a 2 inch cake!

Step 1. Throw away the Wilton leveler.
Step 2. Measure the height ur cake. Divide by three.
Step 3. place cardboards into the 12 X 18 pan until 1/3 (that measurement you did in step two) s sitting above the rim of the pan.
Step 4. Use a long serrated knife and the edges of the pan as a guide, cut.
Step 5. Shove a cardboard/lipless cookie sheet under the layer and lift it off.
Step 6. Add more cardboards to the pan and repeat steps three - five.

Okay, I may just be slow, but I can't visualize what you're saying, Leah. Do you take the baked cake out of the pan, add cardboard to the bottom of the pan, then put the cake on top? Then, cut off and remove the top layer, take the cake out of the pan again, add more cardboard, put the cake back, etc. etc.??
Darn! Here i've been using that dang wilton leveler and getting some funky cut layers and then having to fill them oddly to make my cakes level again! I have another cake in the oven now and will definitely be using this technique this time.
OP: I just want to add too that since your layers will be very thin, you might want to freeze them so that they don't fall apart when you try to put them back onto the cake. Hope that helps.
So I'm definitely considering dumping the Wilton cake leveler.
How do you make sure you cut your layers evenly when using the knife?
