Looking for a recipe for a nice whipped cream like frosting that does not need to be kept in the fridge... Or anything else that you think would be a good match for gingerbread. Thanks!

I use Decorator's Cream Cheese Frosting from this site. It's DELICIOUS on gingerbread cupcakes!!! It does need to be refrigerated, though.

Ocean 23, I have made gingerbread cupcakes and I used a buttercream icing flavored with lemon, and then garnished with some home made candied lemon peel. They came out great, and tasted so yummy! just a though.

I agree with Mommiecakes, lemon pairs really well with gingerbread.
