I'm Going To Invest In Some Cake Pans.... Please Help!

I just got my first wedding cake order!! (yay!) icon_biggrin.gif

So, it's time to order some pans. I've decided on Magic Line (from reading other posts)... Can someone post a link to where I can order these? I want to just order all the sizes I need now so I will have them. My question is: should I order 2" or 3" deep pans?? I've been using wilton's 2" pans and haven't had any problems. What is the advantage of a 3" pan?? I'm going to use the SPS system for the first time (a link to where I can order this would also be very helpful) so my cake needs to be 4" tall right?? I'm so confused. Should I layer two cakes made in 2" deep pans for each teir? How do I get the height just right? TIA! thumbs_up.gif

If you're only going to order a few, Amazon should be a good place to buy. Good prices, quick shipping.

If you want a bunch and can wait a week or so, www.cooksdream.com.

I use 2". Others use 3". It's been discussed in many prior threads.

Did you check out the Sticky at the top of one of the forums - it's by leah_s, the expert on SPS.

SPS = Global Sugar Art or Oasis Supply
Remember to take the collars off the plates.
2" pans
Bake 2 layers per tier. Use enough batter so that the cake bakes a bit taller than the pan. Use a log serrated knife and the edge of the pan to level the tops.
Try Country Kitchen for the magic Line pans. If they don't have them, they'll send Allied which seriously are just the same. Really.

I use 2" pans. I ordered mine from www.countrykitchensa.com.

I just compared prices of the sites mentioned. It appears Amazon is not selling these pans directly, at least not all sizes. They were a couple of months ago!

Anyway, www.countrykitchensa.com has the best prices.

I like 3" they bake better and you can get them just a little higher than the 2 inch pans. I hate tiny short tiers.
