How Much In Advance Can I Make A Cake?

I will be making a pull-apart/cupcake cake for my DS's birthday. However the party is on Sunday afternoon of a very, very busy weekend. My usual mode of bake early in the week, freeze, then decorate the night before won't be easy to pull off.

How soon before the party can I make my cake? And what is the best way to store it (fridge, freezer)?

I bake my cakes and decorate 2 sometimes 3 days ahead if it is a wedding...I put it in the fridge after.I have never had a problem with a customer saying it was dry or stale.

Hi, I bake my cakes 2 days ahead and decorate the day before. If the filling doesn't need refrgeration, you don't have to put it in the fridge. icon_smile.gif

Cupcake cakes (of which I do many), are a very different creature to a fully iced, filled layer cake. I won't do mine more than 2 days out. So you could do it Friday (fully completed), and it should be OK still on Sunday.

ETA: I just store mine in a cake box covered with saran wrap (the box, not the cake), at room temp.

so, it wouldn't work to make it 5-7 days in advance and then to tightly wrap and freeze?

defrosting iced cakes is always a riskyh business as defrosting will work fine one day then wreak havoc the next, condesation from defrosting can make colours run and icing slide and be a complete disaster, but other days it will defrost perfectly!! so it may be a risk but if you have no time you may have to take it
