Hi all,
I need your advice.
My son's birthday party is Saturday and I'm having about 60 people here. (I know, I know, out of control)
I am doing 3 10 inch double layer cakes covered in fondant, with a different 3-D train on each cake (Thomas, James and Percy)
You can see my photos to see what the Thomas one will look like.
Anyway, how soon can I do these? I can't decorate the trains until they are secured on top of the cake, so I have to start with the 10 inch rounds first. Do you think I can start tomorrow or would that be too early??
I plan on refridgerating them even though they are covered in fondant. I freak out about stuff sitting in room temperature. Every time I use fondant its done fine in the fridge as far as condensation goes. Do you think if I did these tomorrow it would be too early?? I'm freaking out about time with all the other things I have to do.

can you say NOW? As long as you are not using any dairy product in your icing or filling, you really don't have to worry about refridgeration. Just make sure you have your cakes covered after the fondant is on. But most importantly, take time out to BREATHE!

Thanks for responding so quickly! The thing I'm worried about is I really can't cover that kind of cake. Thats why I always do my fondant cakes the night before and stick it in the fridge. My icing does have milk in it.
Do you think they would still be ok in the fridge uncovered if I did them tomorrow??

Step away from the fridge!! I know your party has passed but I had to respond! I was just like you, a total freak about things having to go in the fridge. This weekend I did my largest cake and had NO room in the fridge anyway!! I left them out at room temperature covered and they were fine. I kinda feel dumb now for being so strange about it. My life would be simpler if I would give up things like this!

They did go in the fridge and turned out fine.....It's nice to know though that they would have been okay. I use real butter and milk in my frosting so that part worries me...
