How or what do I use to make the antlers for a deer head cake?
I'm putting it on top of a half sheet cake to make it look like it's mounted on a wood board.
The antler I made for the shed on the groom's cake I just made, I used copper tubing for the inside structure of the antler. Then covered it with modeling chocolate, then fondant. I had to sodder (sp?) pieces together to get the different points of antler. I had put rice crispie treats around the tubing but it made it too bulky and not life like - so I opted for the modeling chocolate.

Pretzels are fairly easy to make. I wonder if you could make pretzels in the shape you need and then dip them in chocolate?
You could also use tin foil to make the inside structure of the antlers. But you have to really compress the foil to make it sturdy. Also can use some skrewers and dowel pieces for added support. But be aware foil will bend easy under the weight of fondant and modeling chocolate.
I molded mine out of gumpaste. It was fairly easy to do.
Just make sure you give them enough time to dry.

I too would just make out of gumpaste and mold around a bowl. Let dry thoroughly for a few days, then dust with cocoa for that fur look on antlers. I would also make a few sets of these as they may break and you'll be out of luck on the finished project.
