I love making cupcakes, but usually just stick to either Vanilla or Chocolate cake and then use various flavoured butter creams. I'd like to use flvoured cakes as a base, along with flavoured icings this time, but need ideas and well tested good recipes since I will be passing these out to co-workers and friends.

So far I'm thinking:

Spice cake with vanilla icing
Apple spice cake with some sort of caramel / brown sugar icing
Pumpkin spice cake with cream cheese icing

I've also thought about using a cinnamon butter cream on the above cakes flavours. What are your thoughts on these? Does anyone have any good recipes that they have tried and really loved??

No, i have no idea how to make caramel apple cupcakes! i just tohugt it'll be good! maybe you can cook some diced apples in brown sugar, butter cream etc to get a caramel sauce, and then fold that into a spice cake or something?
maybe they'll be recipes online too...I just never tried any so I cannot refer you to any.

I used this pumpkin recipe & the decorators cream cheese icing here on CC for these cupcakes.

I was informed the teachers came close to fighting over them---I made various goodies & only 1 doz cupcakes.

There's also some yummy recipes here (not scratch though)

I made the Maple White Chocolate w/ caramel icing--really good.

Fall flavors go well w/ caramel, maple, cinnamon, cream cheese icings.

Well I think tomorrow I'll be making Pumpkin Spice with Cinnamon Cream Cheese icing and then probably just a vanilla spice cake with vanilla icing. I'd like to try the apple caramel, but maybe next week.

Does anyone have a really good recipe (moist is better!)

Also, I've seen bloggers post about caramel apple cupcakes, but the caramel icing is very liquidy - not at all piepable.

Does anyone have a recipe for that???

For apple cupcakes use a carrot cake recipe and sub diced apples for the carrots. You can fold a little caramel sauce into buttercream to make a nice caramel buttercream. Yummy--also good with cream cheese icing, rum or whiskey buttercream.

For the caramel filling, why couldn't you add some LorAnn Caramel Flavoring to say a whipped topping or white chocolate mouse. LorAnn has wonderful flavorings. Just a thought.
