How To Make "honey"

Does anyone have a way to make something that looks like honey for a cake I am making??? I don't know what I can use that will look like honey without actually using it.

Can you use piping gel and add a bit of yellow color? Maybe colored corn syrup?

I made a cake a few weeks ago with simulated honey on the top layer. Look in my photos, it's the one with the little apples, pomegranates, and flowers around it.

I just carmelized some sugar and water in a sauce pan, and let it cook until it reached the color I wanted.

Then I poured it out onto a silpat sheet and let it harden for a few hours. You could also use wax paper or parchment paper to pour it onto.

I experimented and did it a few times until I got it to look the way I wanted. I originally wanted it to look like it was dripping down the sides of the cake, but that didn't work out, so I settled for the layer of "honey" on the top of the cake.

You can google "how to carmelize sugar" and you'll find plenty of sites/videos that tell you the ratio of sugar to water that you should use, and the cooking technique.

Miriam~ great cake! I love how that sugar works for your design.....

I agree with tinted piping gel or a mixture of gel and corn syrup....guess it depends on what the finished product needs to look like!

I made a cake with a honey wand and dripping honey and just used piping gel tinted with a bit of brown paste coloring - it looked EXACTLY like honey. HTH
