Anyone Actually Like Chocolate Fondant?

I have tried Wilton fondant, MMF, and MFF. I have not yet tried chocolate. Is it really that much better than the others? Is it true it tastes like a tootsie roll?

I am in the Wilton Gumpaste class and next week I have to bring a fondant covered cake. My instructor went on and on about how fondant is disgusting, no one will eat it, etc. I tend to agree that most of the people who eat my cake peel it off. I am wondering if making chocolate is worth the work (I dont have a Kitchenaid to make it, so I really loathe making it) or if I should just use Wilton since the fondant will likely go in the trash anyway. I do not want to buy Satin Ice because I need it sooner than that and it is not available in my area.
Back to the original question, is chocolate fondant much better than MFF and MFF?

You don't say where you are, but I'm in Ontario. I bought some chocolate fondant from McCall's and it does taste like a tootsie roll.

Also, like colas, not all fondant tastes the same. I haven't tried to make MMF yet, I usually buy Virgin Ice fondant from The Bulk Barn (bulk food store in Canada) and it's not bad. But there are some really tasty fondants out there, you just need to find them. I think one is called DecoIce (or something like that). I'm sure someone else can tell you the names as well.

Do you mean the brand of Chocopan fondant? I ask this because you asked if chocolate fondant is better than MMF or MFF, both of which can be made as chocolate fondant.

I made a batch of chocolate MFF, and yes it tasted good, just like tootsie rolls, but it was very cracked and dry. I later read I should have added the cocoa to the liquids rather than with the PS.

I think your instructor should have kept her opinion to herself. Comments like that is why people have an idea in their head that fondant is bad tasting. I can't count how many of my students will say before trying the fondant that they heard fondant tastes bad.

I know there is that age old agruement on Wilton fondant and I don't want to hash that out. I always tell my students if they don't like the Wilton fondant that there are many recipes that they can flavor how they want as well as other brands. I also wait until they come back to Lesson 3 and ask them what they think. When they say their families don't like it I will ask if it was the taste or the texture. After some thought most of them will say texture.

And the texture of fondant is why I don't make it for any of my family cakes. Only one likes fondant, my SIL will eat Wilton's straight out of the box, but the rest of us just don't really care for the texture, the chewiness of fondant.

So I think that if people are peeling it off, it could be the taste, but if you have tried different recipes and it still isn't being eaten, then chances are they either heard fondant didn't taste good and aren't giving it a chance at all, or they don't like the texture the fondant has, and would rather a melt in your mouth icing.

Not sure if you were asking me this question, but ... No, it's the McCalls brand of fondant. Don't know if the relabel, so it could be the same manufacturer as Chocopan. Never had Chocopan, so I can't say. But it was very much like a tootsie roll.

Personally, I love it.............I used this recipe that you can find on here....Rhond'as Ultimate Chocolate MMF....and it is fantastic!!!!!
It tastes sooooooooooooooo good, and yes, it does taste like a Tootsie Roll!!!!! YUM!!!!
Here's the recipe:


Rhond'as Ultimate Chocolate MMF
Prep. Time: 30 minutes
Difficulty: Easy


Introduction
This is an awesome chocolate mmf that actually tastes chocolate. It's also great for making black because its already dark and you need very little to get it black.
Ingredients
15 oz. mini marshmallows
2 T water
1/2 tsp salt
2 tsp lemon juice (fresh or bottled)
2 tsp light corn syrup (helps w/ pliability)
2 tsp vanilla
1/2 to 3/4 C dutch processed (dark) cocoa
6 C confectioner's sugar, sifted
1/2 C Crisco or vegetable shortening

** I have found that I have to use less sugar because of the cocoa.
Directions
Grease microwave proof bowl w/ Crisco. Also grease wooden or heat proof spoon. Pour marshmallows and water into bowl. Microwave for approximately 2 minutes stopping and stirring at 40 second intervals. Mixture should be soupy.

Take out of microwave and immediately add corn syrup, cocoa, lemon juice, salt and extract. Stir well. Sift confectioner's sugar into mixture, one cup at a time. After approximately 5 cups, grease your hands well with Crisco and knead the mixture in the bowl. Add the sixth cup and continue to knead. Now grease your work surface well and turn mixture out of bowl onto counter and knead well. If mixture seems soft, add one additional cup of powdered sugar.

Shape into a mound and put a coating of crisco on outside. Double wrap in cling wrap and insert into ziplock bag. Press air out of bag and seal. Allow to rest overnight, but, can be used after sitting for a few hours.

I've only had the Satin Ice Dark Chocolate fondant and it's sooooo delicious. Tastes just like a rich fudge brownie. I can just eat it right from the container. Haven't tried it after it's been on a cake yet.... lol

For just regular MMF (not chocolate) I use T's MMF recipe found here on CC. I LOVE that recipe! I have only used it with the butter flavoring and vanilla. But, I know many others say you can change the butter flavoring to something else to match a flavored cake (like strawberry). Something I do do all the time is I go a little shy on the vanilla and a little heavy on the butter flavor. It takes less than 5 minutes to get it made from greasing the bowl to wrapping so it can rest for 1 hour before using it.

I made Rhonda's Ultimate Chocolate MMF for the first time last week. YUM! I don't think it tasted like a tootsie roll at all, like Satin Ice chocolate fondant does. The MMF version was really good. I could eat it like candy.

I've only ever tasted Satin Ice and I don't like it... to me it does not taste like a tootsie roll.. I use it anyway cuz it looks nice.

I've made chocolate fondant from scratch (gelatin, glycerin and corn syrup) -not MMF, and it was delicious! It truly did taste like Tootsie Rolls! I remember commenting when I posted the picture at the time how much it tasted like them.

Thanks for all the replies. I was referring to making it, not Satin Ice. I dont have a kitchenaid so I loathe making fondant. But I might try it with all of your guy's positive comments about it.

On a side note, I have to agree with the poster that said the instructor should keep her opinions of fondant to herself. She is very biased, she says all fondant, including MMF is disgusting, she will talk all of her customers out of it, etc. So we shall see what kind of a reaction I get when I bring in my brown homemade fondant cake next week, eek!

Sounds like to me she's "old school." I know a woman who owns a shop and will turn a customer away if they ask for fondant!


edited to add that it's not that she can't do it, she's just that biased about fondant.

I'm a BIG fan of chocolate MMF. I use it all the time to make black and it's fine as long as you don't put too much cocoa in.

I make a modified version of the MMF recipe in the Articles section here on CC. I just add a little more than 1 tbsp of corn syrup, about a tsp of vanilla and 3/4 cup of cocoa after the marshmallows have melted. Stir, stir, stir - THEN add the PS until it's the right consistency. It won't crack and dry out if you put it in first BEFORE the PS - at least not as badly as if you put it in after.

I've made it using another recipe before and it ended up being dry and cracked a lot but this new method I use is SO much better.

i am not sure which brand she used, but my wedding cake was covered in chocolate fondant and i was surprised at how delicious it was.

I use chocopan and my family/friends LOVE IT!! I make a triple chocolate cake, then fill with Sugarshack buttercream and cover with chocopan and it tastes like a HoHo.

I had parents lie to kids at a party once and tell them that all the chocolate cake was gone.

there is also a recipe for chocolate fondant in "the cake bible". it's very rich tasting, more intense than tootsie roll.
