I have a taste testing for tommorrow and need suggestions and recipes that are non-perishable and go with a lemon cake and a key-lime cake. I also need some suggestions/recipes for buttercream that goes along with them as well. I don't do citrus cakes too often so I'm a bit stumped.

Personally I am always of fan of cream cheese icing on lemon or lime cakes....think key lime pie, or lemon squares.
Also a meringue frosting would be really tasty too.

Thanks Jackie! I need something that will hold up nice and solid in the Wilton cruiser pan, and she doesn't like cream cheese (I do!) so I think I will definately try the Italian Meringue Buttercream. Will it be ok unrefridgerated for a while due to the egg whites?
