Caster Sugar where to buy..

Can someone explain what is caster sugar, and where can I purchase it?

caster sugar is very fine white sugar. It is used in sponge cake and pavolvas or when you need a very fine grained sugar. White sugar can normally be replaced if you need but the best results will be caster sugar

here is what the CSR website says about their sugar: Caster sugar dissolves easily so it is ideal for meringues, puddings, jellies and cake mixes. When used in baking, the smaller sugar crystals caramelise evenly so it produces a fine golden colour in the finished product.
Being a superfine white sugar it can be used as a dry topping, often sprinkled over fruits or baked goods as a light dusting finish.


if you dont have any and cannot replace with regular sugar because you need the quick dissolve use regular sugar and pulse in the food processor until fine - mine you dont turn to powder though.

You can also get it from www.culinarydistrict.com. They have all sorts of baking items at very reasonable prices.

It is also known as Baker's sugar....most grocery stores carry it, if you don't want to pay shipping! C&H makes a good one that my grocery store has!

You can make it yourself if you have a good blender. Basically its just a finer grain than oridnary sugar, Whizz it up, if you keep going , youll get icing (powdered sugar).

I just use regular sugar in madeira cake. You can also buy 'berry sugar', but it's twice the price of regular.

C&H makes Superfine sugar which I think is the same thing. I buy it at the local grocery store.
