Thank you for all your advice.
Do you ever find it difficult to get the cookie out of the cake pan or do you line it first with parchment going up the sides so you can pull it out?

Oh yeah, debster, how do you attach your EI to the cookie? With buttercream or RI?

I put a parchment piece in the bottom (just cut to fit the bottom only, not sides) and then spray baker's joy or equivalent on the sides and bottom of paper as well.
