Does anyone know how long you can store [and how to store] almond bark and candy melts AFTER they have been molded?

I want to give the candy shaped like fall leaves as a wedding gift [for the guests] and not sure how long in advance I can make them.

I've kept almond bark and molded candy melts in the frezer for a couple of months and it was fine.

Make sure that your molded item it is room temperaure when you put it in the freezer. I just put all of my molded pieces in one bag and put them in the freezer. When you take them out to thaw, lay them out on some paper towels so that they will absorb the condensation. They will sweat as they come to room temperature, just leave them alone and let them come to room temp and dry themselves. I did this for some shells for a cake and it worked just fine.

Oh, and once they start to sweat, don't touch them or you will leave finger prints.

Storing candy in the fridge or freezer can cause pitting from condensation, I know that before I knew better I had that problem sometimes.

A better solution is to store the candy in a cool, dry place until it's needed. It will keep for several weeks once molded.

Just seal it airtight and put them in your cabinet. I've had almond bark in the cabinet for months and months and it is fine as long as it's wrapped up. There should be no reason to freeze because it's not perishable. Think of how long those candy melts were probably sitting in a warehouse or store before you bought them. Probably a VERY long time.
