I know I have seen this topic somewhere but I spent the last hour searching and can't find it. Im trying to figure out a basic schedule to follow for making a wedding cake. I have baked all of my layers and they are now cooling. I have made my buttercream and I am unsure what to do next. It is almost 11 on a wed. night and the cake is due sat at 2. Do I go ahead and torte/crumb coat tonight and then ice them tomorrow? I am doing a raspberry sleeve mixed with buttercream and fresh raspberries as a filling so I have to refrigerate after torting(right?). Or do I wrap them and refrigerate tonight? or just leave them covered with wrap on the counter? I am so confused. I can't remember anything. I usually bake ahead of time and freeze them until the day before I need them and torte/cc them that mornind and decorate that afternoon(for buttercream only, fondant cakes I torte one day, fondant the next). any suggestions?

I'd probably just stick them in the fridge tonight...

Fill and crumb coat tomorrow...let chill an hour or two...then ice.

Friday fondant and decorate.
