Ok, I have some RI left over from the week OF christmas (like the 22nd) can I stil use it? Also, how do you know if your RI has 'gone bad'??

The recipe I have says it can be stored in the fridge for up to two months.

I would like to know this too. I have some from Christmas also and somwhere I read that it could be stored at room temperature. So, I have mine in a sealed container at room temperature. I just figured I would try it this week and see how it was. Maybe I was wrong to not put it in the fridge???

Royal should not go in the fridge.

I used some from before Christmas only a couple of days ago -- still tastes good. Just whip it again and it's fine.

I was going to say that I used my royal icing from Christmas today & after mixing it, it was fine! So I guess I was reading right when I read to keep it at room temp!!

Royal should go in the fridge if you have made it with egg whites or it will spoil. I have kept royal at room temp for about a month with good results.
