Any suggestions for a good icing to add on a chocolate cupcake with cream cheese filling....don't know if i should just stick to the basic buttercream?

How about light whipped ganache? Would that be too much?

How about a peanut butter buttercream icing. It you would like the recipe it is very simple. 1/3 cup Vegetable shortening, 1/3 cup butter, 3/4 cup peanut butter, 1 tsp. pure vanilla extract, 4 cups confectioners sugar, sifted, 4-6 tablespoons milk. Cream shortening and butter in mixing bowl with electric mixer. Add peanut butter and vanilla. Gradually add sugar, one cup at a time, beating at medium speed. Scrape side and bottom of bowl often. When all sugar is mixed in, icing will look dry. Add milk a tablespoon at a time, and beat at medium speed until light and fluffy. Keep icing covered with a damp cloth until ready to use. For best results, keep icing bowl in refrigerator when not in use. Refrigerate in an airtight container. This icing can be kept in the refrigerator for 2 weeks, rewhip before using.

try a peanut butter cream cheese filling the next time. scrumptious. but i would simply do a chocolate or cream cheese icing on top.

I'm thinking chocolate buttercream, but Rylan's suggestion sounds good too.

Thanks everyone, would love to try a ganache but need a true and tested recipe as i've never made it before.

I often just dip the tops of my cupcakes in warm ganache. Warm enough to still be fluid but cool enough to stay thick. If you don't put them in the fridge it stays wonderfully shiny and it's just a simple design.

Thanks for your suggestions, i ended up making a chocolate cupcake with pink cream cheese filling topped with a chocolate cream cheese icing, they were quite yummy!!!
I'll still have to give ganache a try one day soon!

Hi Dropoflove,

Here is the recipe i found on CC, tastes great, i used regular shortening, i also added some cocoa powder to darken the colour a bit more. Hope you like it.

p.s. i have a son named Jonathan as well


Chocolate Cream Cheese Frosting II
Ingredients
  3 oz unsweetened chocolate
8 oz cream cheese
4 Tablespoons butter or high ratio shortening
4 cups confectioners sugar
1 1/2 Teaspoons vanilla extract
1-2 tsp milk
Instructions
Melt chocolate in a double boiler or in a heat proof container over simmering water then set aside to cool completely. In a mixing bowl beat cream cheese and butter( shortening) together until smooth and fluffy. Add the cool melted chocolate and until well blended scraping down the bowl often so that everything is well blended. Add confectioner sugar 1/2 c at a time, vanilla, and milk.Beat well and enjoy!
