I saw a recipe on The Barefoot Contessa where she added coffee granuales to her chocolate ganache (cream & choc. chips).
Would it seize if I use regular coffee??

no, not if you blended the coffee into the cream before heating it and pouring onto the choco chips
but....
it would change the liquid ration (esp the fat in the liquid) to the chocolate leading to less than stellar results.
I'd stick to adding the instant coffee to the creme. It works great and you only need a little.
I keep a the smallest jar of instant coffee in the house just for this.
(BLEEH on drinking instant coffee however!)
