Does Chocolate Ganache Need To Be Refrigerated??

I am making smores cupcakes and filling them with chocolate ganache. Do they need to be kept chilled?

After cooking the ganache and chilling it just to soft stage, fill your cuppies. You should be fine as long as the cuppies aren't sitting out in heat. I wouldn't put them in the fridge at all.
Thanks! I made the WASC graham recipe, filling with milk chocolate ganache, and topping with buttercream that I folded melted marshmallows into. I cant wait for the taste test!!
I also wonder what the rules are for ganache. I have a hard time that something made with such a large quantity of dairy can be safe left out. Does the boiling process have something to do with it??

although my friend did make a gross science expirement out of a tuperware of ganache I left at her house to use on a cake.....but I am pretty sure it sat around for weeks - she forgets things like that!
This question comes up alot so I went into one of my choc forums to discuss with the experts and to make sure that my knowledge is correct. Ganache is fine to be left at a cool room temp for up to seven days after that it should be refrigerated. This is true for any ganache.....truffles, filling, icing, etc. But in the end you have to be comfortable with where you put your ganache cause if wrapped well to keep out odors then it is fine to put in the frig.hth
