How many cakes do you feel comfortable doing in one weekend?? Next weekend I'll be doing 4 cakes, all due on Saturday. EEK!! I've never done that many in one weekend before! How many will you take on??

I think it all depends on the design, occasion for cake, etc. In general, I only do 1 cake per weekend (this is PT job for now)... max of 2. My cakes can take anywhere from 6-10 hours to complete due to modeling.
Sure sounds like you will have your roller skates on in the kitchen!!! I bet they will all look awesome!! icon_biggrin.gif

Are they going to be multi-tiered cakes or just a simpler layer cake? Do you have to carve them, and will they be covered in buttercream or fondant? I'm excited for you -- it's like your own Food Network Challenge! icon_lol.gif

I have a similar situation coming up, and I'm actually really looking forward to it. A church group I belong to is having a luncheon that happens every 3 months. They said that the same people always tend to sit together, so to mix it up, they're going to ask people to sit according to their birth month.

I get to make 6 (yes, 6!!!) different cakes, one for each table. For the Jan/Feb one, I'm doing a Valentine's cake, Mar/Apr will be Easter, May/June will be a springtime cake with flowers, July/Aug Independence Day, Sep/Oct Halloween, and Nov/Dec Christmas.

They'll all have to be ready to go on Thursday the 23rd. I can't wait!!

It really depends on the design but I'm usually comfortable with 3. 4 is pushing it for me but I did do 4 one weekend. When I have that many due in one weekend, I will start making the decorations several days in advance, try to have my cake boards covered and the icing already made up, before crunch time.

WOW . . go you! i hope you get em all done icon_biggrin.gif The most ive done in one go is . . 1 haha!! im doing my first 'big' lot, the end of this month, i have two large cakes and a kids party to cater! ive done both seperate . . but not both together! lol

I actually did 7 cakes in one weekend...although 3 of them were graduation cakes and were fairly similar in design. I don't believe I would tackle 7 again, I was an emotional, sleepless wreck! Although I did try to have all icings made, boards covered, and I actually started baking earlier in the week and froze them...I don't normally do that, but it did work out very well. Good luck!

I have what I consider to be a busy week for me the week after next. On the 16th I have a 3D tennis ball cake for my dance partner, 17th a bra cake, 18th a 3 tier wedding cake (plain pink with 1 huge and 2 small handmade gumpaste camellia flowers as decoration), and the 20th is my birthday, but I'm having the girls around on the 19th for a get together and for that there will be a 2 tiered quilted fondant cake with handmade feather & bead spray and satin ribbon/brooch decoration. I work part-time, but I'm taking that week off work to get it all done!

One Saturday I had 7 cakes to get out. Only 4 of them were 3d, difficult type of cakes and the others were either sheet or layer cakes. But I had 3 people helping so it wasn't that bad!

I realized some time ago that I was phrasing my production schedule wrong, resulting in folks not realizing just how busy I might be.

I would say I had "....one cake this weekend." But that one cake is a 5-tier wedding, which means I don't have ONE cake ... I have TEN cakes to bake.

"How many cakes can I handle" depends on the size and the structure AND the catering schedule. I'd rather do a 5-tier cake to serve 250, than 6 or 7 cakes that serve 40. If I have a catering for 300, I turn down all cakes for that weekend. If I have no catering, I can easily do multiple D&R wedding cakes.

It's harder to do cakes and food. With food, I'm dealing with meats and fresh veggies, so cross-contamination is a big issue. I have to completely finish the cake, THEN totally clean up and start on the food.

I totally admire you guys who regularly do carved cakes! I'm not sure I'm that organized yet! icon_lol.gif

Every once in awhile I seem to lose my mind (inability to say NO), and bite off more than I can chew. It's actually harder on my family than it is for me. Last weekend I had four due three were tiered cakes with lots of detail. I'm still recovering. I also work a full time job.

I have done as many as 10 in one weekend..Darn near killed me...But I usually do about 5-7.

Oh, sorry. I call them "Drop and Run" cakes, meaning I don't have to stay and staff anything. When I write an event down in my calendar ("Smith wedding, 2:00,D&R") tells me immediately if it's a drop off cake or a full catering. I just drop 'em off and run out the door! icon_lol.gif

EEK I'm getting nervous now!! The cakes I have planned are: Spongebob, 2 two tiered bday cakes, a baby cake (6 inch &8 inch rounds) and a 3 tier fondant. I'm only covering two of the cake boards and I've already started on some of the decorations. lol (I'm quite the planner!) Hopefully I can pull it off....

Funny... weekend cakes always mean a very busy week! By Saturday I am delivering wedding cakes and usually I'll have sunday pickups. I love Saturday nites! Time to put the old feet up for a few icon_smile.gif I think I have done 6 in one week, all for the end of the week and the weekend. I am a one woman show who works part time morning till noon , 1 o'clock elsewhere, then comes home and starts in on my own business. all the while watching my almost 4 year grandson.!I will commit to one major wedding cake a weekend (maybe two small ones) and a couple other occasion cakes. Thats enough for me!!

Let's see, most wedding cakes in one weekend = &, most in one day = 4. All multitiered.

This weekend I have 5 weddings, 2 groom's and three party cakes.

Sometimes I look at it in terms of servings. I can get out 1000 servings by myself. I gave up my helper several yeas ago.

Let's see this weekend was slow. I had a full sheet for a family reunion, a 3 tier stacked packages for a birthday and a 4 tier wedding cake. Whew!!! I'm bushed!!!!!!!
Seriously I do at least 4 at a time but I cut it off at 6. Can't handle any more than that.
I'm getting too old. LOL

Between 3-5 cakes per weekend, just depends on design, and if they are spaced out over a couple weekend days, and if pickup or delivery. But usually that means tiered or sculpted cakes (not just sheet or round). I bake usually on Tuesday and then will do one cake per day (I have extra fridges) until they are done...can do two smaller cakes in one day but usually each cake will take me a day. Plus I have four boys, only two of which are in school yet.

I'm a part timer, and the most I've ever had to do was 5 in one weekend. It was worth taking the Thursday and Friday as vacation days!
