I need a recipe for a good cupcake and icing . These are for a outdoor wedding rehersal dinner in TN on a farm. I was thinking carrot or spice, but those need cream cheese icing and that is not possible as these cupcakes will bw traveling 4 hours.
The cupcakes will also be decorated with a painted sugar maple leaf made of gumpaste.
Any sugestions wii be appreciated.

How about buttercream, maybe with cinnamon, butterscotch or caramel flavor? You can still do the spice/apple/pumpkin/carrot type cupcake with those.

The ideas are limitless.....caramel apple, maple pecan, sweet potato with a marshmallow icing(you can even cheat and use marsh fluff). Now I need to bake some for me icon_biggrin.gif

thanks for the input.I love the idea of cinnamon buttercream. do I just make the buttercream and then put in some spice .or is there aliquid flavoring that would do better.

i imagine that if you added powdered cinnamon to buttercream, it would give it a lovely flecked apperance icon_biggrin.gif i think that would look rather pretty!

Last fall I used the Southern Butter Pecan coffee creamer in a yellow cake mix... It was amazing!! I also put some coconut in the buttercream and it went very well together!!

If you're decorating with a maple leaf, why not maple flavouring in your icing?

when I think farm, i think of breakfast....grits cupcakes with sausage buttercream
cupcake shaped biscuits with ham buttercream drizzled with red-eye gravy

okay, I am kidding

I made a pumpkin spice cake with a maple cream cheese icing for Thanksgiving. Why can't you travel 4 hours with CC icing? It will hold, overnight even. The sugar acts as a preservative to keep the dairy from spoiling.

Spice cake with caramel buttercream

Add caramel Torani coffee flavoring to your favorite buttercream. (I like to add to cream cheese icing, too.)

Also, if you're concerned about cream cheese stability, but want that flavor, maybe consider: 1) a cream cheese sleeve filling (shelf stable), or 2) add LorAnn cream cheese flavoring to your regular buttercream.
