Okay, I'm doing a little research... I am a licensed decorator currently renting space, but working on a business plan to hopefully build my own kitchen in a year or two. My question is for those that own their own commercial kitchens, which brands and types of appliances would you recommend or definitely recommend staying away from. This is assuming that you could buy brand new and have your dream appliances. In reality, I know it's usually whatever you can get on the cheap through Craigslist/ebay, etc. Here is what I am looking at:

Undercounter Dishwasher - would you recommend a chemical or heat sanitizing one, any specific brand or models?

Refrigerator/Freezers - any specific brands or models? I'm thinking right now of a combo one, refrig on the left side, freezer on the right

Ovens - I'm looking at the Deluxe one, since everyone on here raves about it

One other question - I don't know if this varies state by state, but in your own situations, if you have a commercial dishwasher, are you still required to have a 3 compartment sink or can you get by with a single sink?

Well from what I understood in our city code about dishwashers and sinks is:
Any items that will not fit into your dishwasher will require a three compartment sink big enough for the largest item to be submerged completely.

I have read on here before that you will need a larger fridge than you think.

Check with your dept of Ag or who ever regulates your business, for the requirements on the triple sink with or without a dishwasher. They have your answer.

I am getting ready to buy the equipment for my second shop!!!!
I have a wedding cake shop and I am opening a cupcake shop!
I am buying "another" DeLuxe oven!!!( I have a 3 shelf and I am buying a 4 shelf) and another 8 qt or bigger "Globe" mixer, (I have an 8 & a 20 already) and my commercial freezers/refrigerators are "Traulsen". My dishwasher is "me".
