Just got a request for a cake infused with alcohol. They want a red velvet cake but didn't say what kind. I don't even like red velvet so I do not know what kind of alcohol to use. And I've never done this. Any suggestions?

I've done cakes with alcohol before....simply substituted liquer for all or part of the liquid in a cake mix...Raspberry liquer or Grand Marnier in chocolate cake is especially yummy. Not sure what "flavor" would compliment Red Velvet

I would brush each layer of cake with a simple syrup made with a splash of alcohol. Say, 1 cup sugar + 1 cup water (heated to boiling, sugar dissolved)...remove from stove and add about 1/4-1/3 cup of your favourite alcohol. Cool slightly, then use a pastry brush to coat each layer (tops & bottoms if possible, even more flavour).

Not sure what I'd recommend as a flavour with Red Velvet. Maybe Jack Daniels because of the southern flavour....or you could go with a cherry liqueur as a nod to the red colour?
