I have a cake that is due Thursday night. The client is picking it up. She is going to take it home and then drive the next morning (Friday) out of state with it. The party is Saturday. Once it leaves my care, it is the responsibility of the clients, she is aware.
If I bake my layers in advance and freeze them will the following schedule be ok????.....
Defrost Tuesday. Fill and Level Tuesday. Let it settle Tuesday night (Sharon Zambitos Tip) Ice and decorate Wednesday. Pick up Thursday. The event is Saturday????
I have read other threads that cakes can mold?????? Really???? I have had a cake before left out for 4-5 days (just a cake for me, not a clients), and no mold was formed on it. Still tasted good!! The cake I am making has NO perishable ingredients in it. Yellow cake with BC icing. There is no butter or milk in the icing. Single Tier, 9" round.
What do you think???
Is it going to be covered in fondant? Fondant is great for keeping things fresh. If not, it should be fine. I've never hasd a cake covered in SMBC mold in 4 days, and thats a lot of butter.
I agree with other replies, your cake is protected and should stay fresh and I would not forsee a problem with the covering.
Of course the nearer to the pick up time you can start the better but if this schedule fits with your time it should be fine.

The cake I am making is going to be covered in BC icing. There is NO butter in the receipe. Just Shortening. I will keep it in a cake box.

I work a full time job. Doing it Thursday morning is not an option for me.......=(

Should be fine. The only suggestion I have is to not seal it in an airtight container (i.e. carrier). That's where you will get melted BC and mold forming. In the cake box in the fridge is fine. I store mine in my fridge (in the box) before handing it over/delivering it.
I would tell the client to chill it before she starts out (put it in her fridge for the night, if she can), put it on the floor (front seat) of the car and make sure it's getting some A/C on it for the trip. (Or, if she has a passenger, have them put it on their lap.)

I always read that placing a cake in the fridge dries it out very very very quickly. In addition, I thought fondant and the fridge do not work well with each other?????
I have been doing cakes for a few years now and have left cakes out for 3 to 4 days and they have not developed any mold or spoiled. I too do not use butter in my icing and all have been fine. I think your schedule will work out great so just do as you plan. I ran a cake business in Marietta and never had a problem and I worked full time and taught cake decorating 2 nights a week so I know what you mean about working around your schedule.
