I Soooo Should Have Taken Photos! (Long)

Yesterday was such a bad bad bad bad bad day! Thank you to my husband for putting things into perspective and helping me "get it together".
I have my first wedding cake tomorrow (Saturday, August 8th). For my pastor's daughter and the cake is "the centerpiece" at the reception. Okay... little bit of pressure to get it right.
I baked Monday. The cake is WASC with 12", 10", and 8" tiers. The cake turned out soooo yummy and oh so perfect. I wrapped well in saran and froze. Tuesday I made the fudge filling and the icing. Wednesday I worked at the bakery so nothing happened here.
My husband took all out of the freezer for me at 5am before he left for work (Thursday am) so it could come to room temp. Unwrapped and PERFECT! Thought I'd have the cake finished and decorated by the end of the day.
BUT.... Filled, crumb coated, and perfect. Started icing the cake and I have huge bulges in the center of each tier. Can't make them go away. The more I fuss... the worse my icing is looking. I get it together and it looks like a 10 year old iced this cake. I just want to cry. This is NOT my work! I'm embarrassed and don't know what to do.
Then.... (suspense building)... husband to the rescue... He suggests we take the whole thing apart and try over. You know... scrape all the icing off and take apart my layers... etc... (did I mention I already scraped the icing off each tier once and tried to re-ice) I've been doing this all day by now. It's already 5:30pm.
Okay... what other options do I have? Scrape scrape scrape.... and try to pry the top tier apart with that fudge between the layers. By the way.. fudge = GLUE!!! Top tier in PIECES!!! CRAP!!! To the store to buy more ingredients. I just know I'm going to lose the top of the 12" and the 10".
So after some tears, several hugs, and a very supportive husband who helped me trim, level, and stack, while staying up late to lend all the while having to leave our house for work at 5:20am... I LOVE that man!
I went to bed last night at 12:30am with an iced cake. It's a blank canvas ready for decorating. If only you could have seen how horrible it looked and how terribly the top layer of each tier crumbled. Gotta love my fudge filling. Talk about a fantastic glue to keep the bottom tier together. ha ha Till tomorrow.... happy decorating!!!
Hang in there! And at least using that fudge filling, you know nothing fudge-adhered is likely to slip in transport!

What a wonderful hubby you have there! Yep, definatley a keeper! Can't wait to see the cake!

Aww what a great husband! Can I have the fudge filling recipe??? LOL - it does sound like a great filling!
We've all had those days. But the best part is that the cake will be done, EVERYONE will just love it, and the stress will instantly melt away once it's delivered. Don't be too hard on yourself, I bet you the cake will be GREAT!

Also... recipe I use for fudge filling....
Find a chocolate ganache recipe you like. I found one on here. I used a bag of ghiradelli chocolate chips (60% cacao (sp?)), heavy cream, and do the ganache thing.
Let cool... then whip the snot out of it. Then add in a package of the no bake cheesecake filling. Just the powder! I throw the rest away... You may need to add more cream to get your desired consistency. I also add in whatever flavorings I want... Kahlua... coffee... vanilla... almond... etc...
It's gorgeous! I never would have guessed that you had problems icing it. Your piping and flowers are amazing too! Wonderful, wonderful job! I am sure she will be absolutely thrilled.
Great recovery, the final product is amazing (and in the end that's all that really counts right?). I love the colours in the cake, I can just imagine how stunning it'll look at the venue.

wow, after all that trouble it came out beautiful. No one would know. I'll bet your cake wasn't completely thawed out and that's why you got the bulges the first time. The change in temp can create that.
So the cake is all done, gets to the venue without a hitch and all goes well. I learned a lot about cake, myself, and other people today. It was all very anti-climactic and maybe that's because I'm an attention needing cake decorator... who knows.
Cake was for my pastors daughter. We have a large congregation so realistically, they are in a hard spot with a budget because everyone thinks they should be invited. To work it out, they have a light lunch reception at the church after the ceremony where they invited some of the church but obviously not everyone. And then go to the "real" reception at 1pm. My cake was for the 350 people at the reception BUT mine was just the "centerpiece" and there were like 4 sheet cakes from some bakery or grocery store there as well. No big deal, I knew about that.
I was sooo stressed about this cake and as my "first" wedding cake, it meant a lot to me.
Then the best man was twitting photos all day. I happened to see photos of them at the "real" reception that I did not attend they have a 4 tier, white cake, with scroll work and flowers on top and they did the cake cutting ceremony all over again.
All of a sudden, I just deflated. I feel a lot better about it now but I was pretty upset when I first realized that this cake that meant so much to me, meant so little to the bride and groom. Oh well.... Thanks for listening (reading) and supporting.

I am so sorry it had the conclusion it did.... Don't let it get you down, the bride and groom will remember their first cake cutting despite having another at their supposed "real" reception.
If I were the bride I would be proud to have that as my centerpiece cake period! Hugs...

Is it possible a family member or family friend of the bride or groom is a caker? I'm wondering if they loved your cakes and wanted you to do one, but they also wanted the other caker to do one, without hurting the feelings of either of you?
You never know. Maybe the other caker is fretting and sad because s/he wasn't asked to do the one for church reception, and wonders if they think something is wrong with his/her cakes.
I, and many others, have told you before this how talented you are. Don't let this tiny thing hurt your confidence one bit!
Your cake is beautiful! I know it's not easy to accept that there was another cake in the picture but, if you're trying to get business you'll have had a much better advertising opportunity at your church. Chances are it was filled with potential brides-to-be who live where you are, as opposed to the few who attended the "real" reception, who may have been many out of town guests.
First and foremost, your cake is absolutely GORGEOUS! I am sure the b&g were so pleased with your work. You know that it tasted wonderful, as everyone who was at the church reception enjoyed it. (and probably told you so too!)
As far as the cake at the "real" reception, don't make yourself crazy about that! I see you live in PA and I live in NJ. A lot of banquet halls in my area DO NOT allow outside cakes to be brought in to a party. They provide the cake as part of the package. Many places will allow you to bring a cake, but will charge a "cake cutting" fee. It could very well be that one of these issues is at play here.
I know we look for every opportunity to showcase our talents, and you have done just that. Don't beat yourself up about the "other" cake. It in no way means that your cake was not important to the b&g. Chin up!!
Please don't feel bad about the other cake. There is no way it could out-do yours! I about swooned over your cake when I saw it in the thumbnail on the home page. It was even more gorgeous when I opened it and saw it in a larger photo. My husband (who never raves about anything hardly) said it is the prettiest wedding cake he has ever seen and I pretty much agree with him on that one
I guarantee you that there are people who attended the first reception that are still talking about how lovely that cake was. AND, I also bet that anybody who saw that in your portfolio of photos would be very impressed and comfortable with hiring you for your skill set.
