Urgent Help Needed!!!!

I just attempted an eggless vanilla cake recipe from scratch and let me tell you it was HORRIBLE, actually went directly in the garbage, way to much butter, did'nt rise, just YUCK......so my question is....has anyone made a boxed cake mix omitting the called for eggs and subsituting some other ingredient....possibly applesauce????? Any suggestions for an eggless cake fix would be GREATLY APPRECIATED!!!!!

Ugggggggggghhhhhhhh WHY DO I DO THIS TO MYSELF????????

Have you tried using soda instead of the called for ingredients-- it is supposed to be pretty tasty- doesn't rise as much, but still tasty.

Also, what about substituting meringue powder for the eggs? Just a few thoughts.

Silken tofu, maybe? Never tried it, but I know it's used alot in vegan baking.

soda added instead of any other ingredients does make a yummy cake, but doesn't rise as much.

One of my daughter's friends is allergic to eggs (and other things) so I know she does substitute apple sauce. Not sure exactly how much. She brings her own cupcakes to school when there are functions.

I have a scratch veg butter cake recipe which is pretty good. I use evaporated milk instead of eggs.

Ener-G or EnerG Egg Replacer.

You can buy it at Whole Foods, Wegmans, and other food stores that have more natural foods and foods for people on dietary restrictions.

You can also try a Wacky Cake.

Go to AllRecipes. com and type in wacky cake. Has no egg and no dairy and is very good.

My son was allergic to egg. I've used the EnerG in cakes, cookies, and more. icon_smile.gif
