i have made some cupcakes for a birthday cake at on saturday and wonder how i can store them to keep them fresh i have not yest frosted them.

If you can wrap each individually in plastic, great. Then in a plastic bag and into the freezer.

If you can't wrap each one, put them in a box and wrap that in plastic several times and freeze. They should be great.

Thanks for the reply i was goin to cover them in frosting tomorrow as they would like the cake early sat morning, do you still think it is nesacary to freeze.Also how will i defrost them once needed?

What kind of frosting are you using? If it doesn't need to be refrigerated, you can let them sit out in a safe place.

I put mine directly into ziploc bags once cool if I'm planning to use them within a short time (1-2 wks). If I'm freezing for longer, I either put them in a tupperware-like container or wrap individually in plastic as another poster mentioned.

I let them unthaw slightly before frosting. I woudl still freeze them even if you're frosting them tomorrow...it will help preserve the moisture.

If you've got the room, freeze em. They'll just be that much fresher when you need them. Cupcakes won't take that long to defrost - an hour max. You can't go wrong. Rule of thumb - once they are frozen, don't unwrap until thawed. This minimizes condensation on the cakes themselves.

Freezing just preserves freshness.

I was thinking of using royal icing as i am planning to put rice paper cartoon logos on the cupcakes.

I will be sure to freeze them as suggested.

hello all!

Apologize in advance if this has been answered already. I'm just really confused. I have to make 130 cuppies for a wedding at the end of the month and would like to freeze them (I guess best to do it max 2 weeks before the event date). What is the best way to thaw them? I heard 2 different versions and I don't want to end up with dried cuppies.
1st version is - keep the cuppies in the sealed wraps until thawed (assuming I just move them from freezer straight to the counter)
2nd version says I should remove the frozen cuppies immediately out of the plastic bag and let it thaw like that otherwise it turns all gooey.

Any advice you can give would be really really appreciated! I'm trying to be all organized and such - and I can't really do that if I'm scrambling the day before the wedding because every prep I've done goes horribly horribly wrong! icon_redface.gif
