Vegan Recipe??

Looking for vegan recipe, have a customer that would like a cupcake less fatting etc. looking for several different recipes, she prefers chocolate raspberry if any one has a recipe. Thanks for all the help.

Although you should keep in mind that vegan doesn't necessarily mean "less fattening." You still have to use oil and vegan shortening to make and frost vegan cupcakes.

Lazy Cake

2 C sugar
3 C flour
3 T cocoa
2 tsp soda
1 tsp salt
3/4 C oil
2 T vinegar
2 C cold water

Mix all ingredients with liquids together. Mix fast. This will be a little thin. Bake and frost with desired frosting.

I'm vegan, and hope I can help.

Choc-rasp~ You can fold in 1/2 to 3/4 cup raspberry preserves. I make a choc-rasp mocha cake by replacing the water with brewed coffee.

You can also make the cake less caloric/less fat by replacing the oil with applesauce. Applesauce with a little soymilk if oil is your only liquid. I'd have to see your recipe to give exact replacement amounts. (you will not taste the applesauce, by the way...)

Your cake should not suffer flavor or texture if it's not overmixed. If it is, you could end up with a bready cake.
