Help!!! Newbie Being Given A Break....

Details:

- My oven can only accomodate 1 cupcake pan (12 3oz)
- I know it's been asked before but it's out there in 700+ pages...how do I freeze cupcakes?
- How long will they keep?
- Do you have easy, tasty cupcake recipes that don't need fancy ingredients?

My condolences on your oven. I have a similar, albeit slightly better situation, in my apartment.

I freeze UNDECORATED cupcakes in an airtight container with layer of wax-paper between cupcakes. For extra security you can saran wrap everything. So far this has worked really well. I have never kept anything frozen more than three months, but they may last longer.
