I had some people ask me to post what I think of the all-natural flavorings I purchased from Spices, Etc. I started with the Lime, Cherry and Orange, putting them in Antonia74s RI. I am happy to post that I am very, very pleased with them. I am doing ice cream and summery treats cookies and wanted to make the cookies actually taste like the flavor they appear to be take a bite into an Orange Creamsicle cookie and have it actually taste like orange, or lime or cherry. thumbs_up.gif

For this initial testing, I put the flavors just in the RI itself as I already had cookies baked up and ready for RI flavor testing when the box came yesterday. I eventually plan to test flavors into the cookie dough itself as well, but for now, the testing is on the RI. I mixed up a batch of Antonia74s RI and separated them into different bowls. I added my colors and then the appropriate flavors (Lime, Orange and Cherry) for the separate ice cream flavors. I was doing small batches and added it to taste.

As for the flavors themselves, the Lime is nice and strong. The Orange was perfect and I liked the Cherry as well. The Cherry has a color tint to it, but as I was adding pink, it did not matter. If I were doing white, I would counterbalance it with Americolor White, but plan to use Cherry with pink and red anyway, so for me, that is not an issue. The cookies dried overnight and I just tested them to see how well the flavors held and they indeed did! Very yummy! Oh, and no discoloring or odd drying from using the flavorings, but I didnt expect issues anyway as they are all-natural.

So thumbs up on the first test of these flavors! GeminiRI ordered also, so we can see what she thinks of the Lime, as I know she got that one. I have several more flavors to test and as I do, I will post them with their own posting listing the flavor tested. I plan to do coconut next, playing with it in the dough and in the icing. I expect that will be good as Cook's Illustrated rated it the the best of the coconuts it tested, which started me on this whole journey of trying to find good quality, all-natural flavorings. I will also be very interested to test the clear vanilla as well as I want vanilla taste in my RI, but not the tint I get from my normal vanilla and or the artificial ingredients in other clear vanillas, so this all-natural clear one has peaked my interest.

So, so far, so good! icon_biggrin.gif I will be passing out these prototype cookies to taste testers today and making up another larger batch for the swim team concession stand for Monday and I will tell you how that goes. I just like that I can offer something different as I have been getting tired of having the same flavors again and again. It has breathed a bit of new life into my cookie-ing and I have already ordered more, excited at the flavor combinations and possibilities.

So the lime and orange flavorings had no color? Wonderful to know. The key lime is white, so I figured it would be good in the icing as well as the dough. Unfortunately, I have to go out of town and won't be able to try out my new flavors for a while. Not to mention a custom cutter I ordered just showed up, too! And I won't have computer access, so my withdrawal will be doubly hard, knowing that you're posting all this information and I'll have to wait to read it! I guess it'll give me something to look forward to when I get back home.

The Orange is a creamy whitish and the Lime is the same. Neither really tinited my RI color. thumbs_up.gif I also have Butter to try and it is has a bit of color, but I don't think it will pose an issue. Coconut is a creamy lightish color. Key Lime is a creamy white. Tangerine is yellow, but as I plan to do it with orange coloring, I am not worried. Lemon is completely clear as is Almond. The Vanilla Two Fold (double strength) is traditional vanilla extract colored and I did just a quick, mini test. It was delicious and obviously did tint the RI, which I could counterbalance with Americolor Bright White. However,I will try the Clear Vanilla coming in Monday's box first before I start adding the Bright White to the Two Fold. I did love the Two Fold though and will be interested to see the taste difference with the Two Fold Vanilla vs. regular strength in the dough itself.

I ordered yesterday and can't wait to try them. I got the Best Sellers six pack (Vanilla Extract, Coconut, Hazelnut, Almond, Peach and Raspberry) and lemon. I'll review once I've used them.

Hi Diane - Overall, they are mainly flavorings/extracts. Of the 53 flavors, I see only three oils (Cinnamon and two different smoke oils), so the remaining 50 are flavorings/extracts.

Sallene - Yum! I look forward to hearing about your flavors! Hazelnut does sound delish with a chocolate cookie. I didn't try the Hazelnut or the Peach yet, so your take on them will be great. icon_smile.gif

I said I would post results from my taste testers and two thumbs up on the Lime, Cherry and Orange. Everybody loved the flavors. Great feedback as well on the ones I made for the swim team concession stand. I have had people stop me in the neighborhood to say how much they loved them. So... these three passed the test!

GeminiRI, I am looking forward to seeing what the key lime tastes like. I just did a key lime wasc but couldn't find an extract or flavoring that would really give it a punch. The key lime yogurt is such a mild flavor. I had to use some key lime juice to help flavor the batter.

Chocolate cookie - Hazelnut icing (something similar to toba's glace)
Chocolate cookie - banana icing
Apple cookie - Cinnamon icing
Pecan cookie - Maple icing

Etc. etc.. !

Oh, yum! Big time yum! Love the idea of apple/cinnamon and pecan/maple for Fall especially! I got Macademia to try in my RI with a White Chocolate Cookie. (That is, once I get the cookie recipe down!). Right now I am having fun with the Coconut!

I am curious, how much of the flavoring did you use?

i am getting an assortment of the 1 oz size, with the exception of the Coconut, which I got in the 8 oz and I am really glad I did! Very good!

As for the amount, I put it in by taste, but did a few small batches when someone asked me the amounts I was using. For my RI, I used 3/4 cup of RI and 1/16 tspl of Lime. Same with Orange and more of the Cherry. For the Coconut, I am putting it in the dough to start with. I did 1 1/2 tsp of Coconut to 1/2 tsp. vanilla. Wrap up your dough well and let sit in the fridge overnight for the flavors to meld and strengthen.

I've already have a banana cookie with real banana in it but i'll boost the flavor with some extract.
I'm hoping to do the same with the apple one and I hope that they will also keep their shape...
And also for the pecan one , i'll put some finely grind pecan..!
I already have have a maple cookie that I use to make with boyadjan brand (something like that) but I want to compare the flavor ..!

I hope it won't take too long to get it !

I haven't tried the Boyajian Maple flavoring. I would be interested to see what you think when you compare them. I have the Spices Maple flavoring and a recipe for a cookie with pure maple syrup in it to try. I also saw that they had Pumpkin Pie Spice flavoring, which I thought might be fun for Halloween/Thanksgiving. Right now, I am thinking more tropical icon_smile.gif , but before we know it, leaves will be turning. (Okay, maybe not that fast! icon_lol.gif )

I tried the raspberry and hazelnut this weekend. Both in fondant that went on cakes. The raspberry went on a lemon cake with raspberry filling. The hazelnut went on a white chocolate cake with dark chocolate ganache filling.

Both got great reviews. I especially liked the raspberry.

Yay, I ordered today, some retail therapy was definitely in need (don't you just love that, a great excuse to spend money that you wouldn't normally!) I ordered coconut, strawberry, pineapple, macademia nut, grand marnier, butterscotch and key lime. Wooohooo.

I'm from Montreal and I filled an order last friday but for now no news about it, probably because of the fourth of july holiday... I know in the FAQ it says they ship to u.s. only but when Tracy arranged a discount they gave both options because of the international people... so maybe they didn't updated that section of the website...
