I guess it depends on how big you want them. If they ae just a decoration, how about making them from a 50/50 mi of fondant and gumpaste and just mold them.

I had to rush on some baby blocks I did for a cake...but they came out pretty close. I just used a measuring cup and packed it with fondant then took a knife and evened out the cup and then formed them from there. But a few time I grabbed the 1/3 cup instead of the 1/4 cup and I just winged it. It had been a really really really long night...I hope that helps.

You can also use a kitchen scale to measure the amount of fondant?

I made blocks once and started with the square Little Debbie snack cakes. I stuck 2 together to form a block. From there, I frosted and covered with fondant. They turned out really cute and were easier than trying to frost hunks of cake. But, I did feel like I was cheating!

I am currently working on the same thing and I am using plastic blocks bought at a craft store then wrapping them in fondant. I guess you have to decide if you want them edible.
