I am doing a cake for my friend's neices bridal shower as a gift...one layer will be german chocolate, and she wants the other Almond cake...my question is what kind of filling goes well with an Almond Cake, I have never eaten almond cake before so this is a first for me...also my first big cake, I have really only done sheet cakes. Also, She would prefer it to not be covered in fondant, but in my opinion adding buttercream to the tops of these cakes to still be able to get the design we came up with would just be tearing away at the taste. Please any advice helps especially with what kind of filling on this almond cake!!

What about almond?
I love almond cake and my frosting for this cake is always flavored with almond extract.

Here's a suggestion: since the other layer is german chocolate, and german chocolate cake is usually frosted with toasted coconuts, try a combination of toasted coconuts and toasted slivered almonds.

Make a chocolate caramel and mix the toasted coconut and almonds in. Use this as your filling.

Hope this helps. Be creative. You'll be amazed at what you can come with.

Raspberry and cherry are both lovely with almond cake. I have also flavored icing with french vanilla instant cappucinno mix and it was FANTASTIC just like eating an almond biscotti cookie with a cup of cappuccino. This is one of my most requested flavors! I have done this in reversed too and flavored the cake cappuccino and the icing almond!

I usually just do vanilla IMBC as the filling and frosting with almond cake. I find almond is a very powerful flavor and it can be overwhelming to mix in too many other flavors.

You may want to try choc ganache as the filling with almond cake too though.
