I've heard conflicting stories.. I 've heard to color when you are melting your mallows and have also heard to wait until right before you cover the cake (when you are kneding it). What should I do? I havent added it while melting the marshmallow, but I did notice last time I tried to make a rich color it got really sticky. I have an important cake to make this weekend. Please help!

When to color MMF?

I usually do add the color when I'm melting the marshmallows, unless i'm trying to make dark colors like black or red. For some reason my MMF always turns out all dry when I add dark, rich colors to the mellted marshmallows, but if I mix those colors in before I cover it, the texture is much better. Probably doesnt' help you much LOL, but that's what i do

I've always added it after melting MM. I've done just about every color imaginable and even with black and red, it comes out great.

I used MMF on my daughters wedding cake. I put each peice in the microwave briefly for ease in handling and added the blur color while kneeding before rolling. I wanted it to look marbled so I had to add it this way.
