This is my FIRST wedding cake! I know there are a few of us first-timers here, but I thought it would be nice to see where everyone who is doing a wedding cake for this weekend is!?

I have been making fondant pearls (large and small) for two nights now, and just baked my first set of cakes (I have to do them in 2 batches, as I only have one oven and a small 5qt KA!)

How about you all!?

OH, and I thought I'd add. . . although I have a general idea of what I am doing as far as design and the bride has no specific request (except color and simplicity), I HAVE NO SPECIFIC PLAN OF WHAT I AM GOING TO BE DOING ON THIS!

this weekend will be busy here for me. I have a birthday for tomorrow, and 1 baby baptism, 4 graduations on Friday and 2 weddings on Sat. kinda busy, but I like it. Good luck everyone. icon_smile.gif

You freezing those cakes lrlt? I had the good fortune of taking this entire month off so I can come and go at will. But then, I took a birthday cake order for Saturday. ((sigh)) But it did pay for the new tires I just had to put on my car unexpectedly!

got 2 cake for father's day and 1 2tier luau themed cake due on 27th... and for jul2 got 3tier wedding cake and 51 pcs 2" mini cake as souvenirs... and the bride mught add 30 more souvenirs... got a very busy week ahead...

Wedding cake here too. I have a couple who want the very lovely butterfly cake from the MS mag cover. I'm excited to do it, but a little nervous...the ladies bought multiple packages of butterflies from the vendor but they aren't pre-wired and they finally gave them to me this past weekend! So I'm sitting here measuring, cutting and attaching wire to all these things.

Just got an order for a big college grad cake that's due the same day. Hmmm...with my 4 y.o. out of school already, it's gonna be an interesting three days. icon_rolleyes.gif

No, I am not freezing them, but I did just put them in the refrigerator. I need to have this done by Friday night, as I will be tied up all Saturday (the wedding is at 6:30 pm). Plus, I have to bake them all in 2 batches, as I don't have the room to bake them all together (and since it's 11pm, I have to do the other batch tomorrow!) That leaves tonight and tomorrow to cool and re-frigerate; tomorrow night to tort, fill, crumb coat and re-refrigerate; Thursday morning to take out and room-temp; Thursday night to buttercream/fondant; and Friday to stack and decorate??

Are you referring to the freezing cakes thread, or are you suggesting I need to freeze this!!?????? icon_cry.gif

Do you think my plan is okay, or would you suggest a different schedule??

lrlt2000 - I freeze my cakes all the time and so far no problems. I think if what you do works stick with it! icon_smile.gif I am doing a wedding cake, birthday cake, graduation cake and father's day cake this weekend. It is supposed to be rainy and humid here (IL), so I am going to start baking tomorrow.

I have my first wedding cake this weekend as well and a topsy turvy birthday cake. Both due saturday. I'm baking and freezing today,thawing,filling & crumb coating tomorrow & decorating friday. At least thats my plan...would help if I could stop getting sidetracked and get off this website!!!!

I have 144 wedding cupcakes due Friday, a 3 tiered b-day/retirement cake, another small b-day cake due Sat. Plus I'm traveling 500km for said party.
Baking tomorrow all day, decorating and packaging Friday. Ugh, I'm tired.
But then I'm done work next week and I'm off for the summer (well, at least 4 weeks).

I have a wedding cake for this; Sat. 12:00 noon. all my layers were baked today and are now in the freezer, most of the frosting is done. I will crumb coat tomorrow (Thurs.) afternoon/evening; decorate Fri. afternoon. The layers are 8-10-12-14, simple decoration, diamond impression, cornelli lace and swiss dots.; the bride will provide the topper. So it's the calm before the storm. I tend to get anxious at the last minute, making sure everything is perfect; delivery, etc. So...that's it until next week with graduations. My grandson being one of them...from high school.

Wow!! some of you ladies are soooo busy!!!!
I have a baby shower and a wedding (my official 2nd) on Saturday. The baby shower cake is in the oven now. I'll bake the wedding cake tonite after work, make icing. I started on the shells last night, but will have to make more. I presifted all the mixes and added dry ingredients, also measured out all the shortening so it will be easier. Cake drum is made & parchment for the pans all cut. I know i'm forgetting something. Wedding is 14-12-9-6 with ribbon and shells, should be pretty easy. No clue what I'm doing for the baby shower cake other than I made baby Converse ahead of time.

First time for me ...I took to weddings in one day.
Less than 2 years ago I stood in my home kitchen making my first wedding cake....today I have my own cake shop, wondering everyday what in the heck am I doing.
Those first wedding cakes will get you in trouble!!
Anyway, I have all of them baked... grooms cakes done, gonna hit it hard at 6 am.

Beautiful lrlt2000!!! Great job! Congrats on your first! My baby shower cake is done and ready to be picked up. The wedding cake, not so much. icon_smile.gif I'm using SPS and i didn't center one of the tiers correctly. ugh. oh well, it'll be the back i guess. It looked alot better at 1AM! icon_sad.gif Still working on the decos, but at least it's iced and stacked.

Well, I had a ton of cakes this weekend (see previous post), but the wedding cake killed me. If I did not have three more weddings booked, I would quit doing wedding cakes forever!

I don't know what happened so I am looking for advice and sympathy. Big storms came through our area Friday night and the power was out, so I could not start working on cakes until 9:30 pm. I got all my other cakes done by midnight and started working the wedding cake which was 6", 10" 14" round. I leveled all the cakes individually and then each tier before stacking. I used straws - 15 in the 14 and 10 in the 10" and put a dowel through all the cakes (first time ever!). Cake was perfectly level at my house.

Chilled my car because it was 90 degrees with 100% humidity and my husband helped me get it in the cake (it weighed a ton). Thankfully he came with me. Got to the reception site, a poolhouse in someone's backyard and the 10" and 6" had slid all but an inch from the edge of the 14". The weight of those cakes crushed the 14". I took the 10" and 6" off the 14" and slapped some more frosting on the 14" and tried to fix the back where it was crushed. I got a plate from the hosts to put the 10" and 6" on, but then guests were arriving. (She only gave me 15 minutes to set up the cake because my contract says not to leave a cake out too long in the humidity.) At that point I just asked her if it was ok to not restack the cakes. She said yes, and I tried to set them up staggered. I have no pictures because I had no time. I refunded all of her money to her even though she insisted I keep it because the cake was usable. I just wouldnt' feel right doing that since she didn't get what she ordered.

So what happened? I have done stacked cakes hundreds of times. The only new things this time - 1) I bought and used the 3" Performance pans and 2) I put a dowel rod down the center of the cake. My frosting was the same and cakes. (FYI- 14" devil's food - with frosting in between the layers, 10" lemon cake with frosting in between; and the 6" red velvet with frosting in between. Any thoughts? Was it just the humidity?

I have had a quiet weekend....I only had to do 50 party squares for my brother's baby shower...simple and easy. Also did 50 mini brownies, with white/milk chocolate drizzle.....
I had a 8' golden butter french vanilla cake with homestyle strawberry icing on Thursday....and 2 dozen Oreo truffles, and 2 dozen cheesecake pops.....
Just an easy week. This week, dh and I are on vacation! thumbs_up.gif

skidoochic! So sorry that happened to you! What kind of straws did you use? Regular straws are not strong enough to support that kind of weight. There are CC members who use Bubble tea straws, but I've never done it. Did you drive your cental dowel all the way through into the base? I don't think it was the pans or the humidity. Next time try the SPS system that leahs suggests - it's awesome!

Thanks! It sucks, but, like I said the bride was fantastic about it and I even got another order from a guest at the wedding (thank God it is not for another wedding cake icon_wink.gif ).

I did use regular drinking straws which I have used many, many times before without a problem. That is why I just don't get it. I will have to check out that SPS system since I have a few more wedding cakes to do, but I just don't think I am cut out for them. icon_cry.gif

skidoochic - that sucks. The humidity probably killed you. It makes everything wetter from the time you start with flour - just try to make bread on a rainy day. However, SPS might have saved you. Don't quit. Just charge an equipment fee for the SPS so their cakes won't fall.
