End of June I have a cake for my friends daughters 1st birthday cake. Theme is lots of pink and princess, I have lots of ideas in my head for the design, but it just hit me the party is outside under a pavillion at a state park during the heat of summer in Florida. When I use fondant I use Satin Ice and the BC icing I ususally use is 1/2 butter, 1/2 shortening, and coffee creamer for the liquid.
I've never done a cake that needed to withstand heat, what is the best plan of action. I thought about keeping the cake in a cooler until right before serving but worried about the cake sweating or melting faster once in the heat.
What are your suggestions??
I use the Wilton shortening recipe and made a cake for Memorial day. I left it in my car for about 2 hrs, didnt want it out at the beach and it was fine. It had Wilton fondant stars on it and they were fine too. I did not use butter though.

Lee9 I don't have an answer for you but am curious as to where in central florida you are at? I am from Leesburg but live in Kentucky now but have a sister that still lives there and is always looking for cake friends.
The satin ice hold up great. Just be sure that you don't roll it too thin. I would highly suggest using high ratio shortening instead of Crisco. We don't have a Costco, but I understand they carry it there. It will stand up the very best. We only use high ratio shortening and never have problems with the heat and humidity.
