Butterscotch. I use it all the time in my cake truffles, it's so good.

Bit of heavy cream whipped up with some powdered sugar.
slowly mix in Smucker's sundae syrup: butterscotch flavor. Add a tsp or so of butter flavoring and there you go.

When I make the truffles i usually just add the cream, syrup, and butter flavoring to the crumbled cake.

My sister shared her secret with me...Seedless Black Rasberry Perserve. It gives it a good tartness and than sweet mixed with it. Really good and easy.

My daughter really like yellow cake with chocolate. It seems to go together.

The beauty of a yellow butter cake is that, as long as your filling is not also buttery, it will go with just about anything you put in the middle.

i'm making one this weekend and will either do a chocolate-chocolate chip mousse filling or a strawberry puree and whipped cheesecake filling.

strawberry filling (my method is on my blog, link in signature)
ganache
whipped cheesecake filling
chocolate cherry fudge filling
raspberry filling
mango curd-like filling
cream cheese dream filling
butterscotch filling (I make mine differently than posted above)
apple butter
pastry cream
capuccino pastry cream
caramel
dulce de leche (I just learned how to make this, totally easy!)

I'd be happy to share my methods/recipes for any of the fillings above!

sayhellojana - i just checked out your blog and it looks like you have a lot of good recipes there...i'm especially interested in the brown sugar buttermilk cake...would you mind sharing that recipe? i couldn't find a link on your blog so if it's there just let me know and i'll go back and check again. thanks =)
