I recently purchased " Sweet Celebrations " by Sylvia Weinstock, and I was wondering if anyone else had this book?

The reason I am asking, is this chef has some of the most beautiful cakes I have ever seen, and after I read the book was surprised at one of her statements... She doesn't use fondant as a covering for her cakes. .. yet her cakes are flawless.....

Did I read that right??

I had the book...sold it

I was thinking possibly she used chocolate clay...maybe?

The pictures in most cake cooks are photo shopped or staged using materials other than cake and icing. The pics you are looking at are probably not real cake. I don't have that book, but I know that the pics in Wilton's books are not real cake.

in the "sweet celebrations" book, she is only bc (most of her decorations though are gumpaste flowers and fondant).

however, in her subsequent books, she DOES use fondant.

I have her latest book, and its almost all fondant. It's a beautiful book.

isn't her latest book over-the-top beautiful? i love looking at it. i wished she gave more "how to" information though.
