How Do I Keep My Cake From Browning On The Sides And Bottom?

This sounds like a silly question, but in a few weeks I will be decorating my first wedding cake for my cousin. My question is....how can I keep from the sides and bottom of my cakes from getting brown. I notice that when you buy a cake from a bakery.....it's never brown. Any ideas? Also does anyone know where I can find edible pearls? Or any ideas on what to decorate the sides of the cakes with to keep them from looking plain? I'm doing a 3 tier cake on the wilton cake stand where there offset from each other. I will be using pink artificial flowers on the top of 2 layers and then the cake topper on the top layer. Any suggestions would be appreciated. The closer the date gets, the more nervous I get lol. icon_redface.gif

Hi! You might try using a flower nail in the center while baking. I have also noticed that when you reduce oven temp. that will help. I have bought edible pearls from both earlene's and cakes by sam. I got lucky and also found them at a cake supply store where I live. If you are trying to save money on your supplies...I would recommend buying the hard ones because you get more. You could also do simple dots on the sides if you do not use the pearls. Good luck!
