Anyone have a cheesecake recipe that will work in an 11x15 pan? It needs to be the baked version not the mix and refrigerate kind. Also, do you put this in a water bath in a larger cake pan? Anyone that has tried this? Please help.

I have baked cheesecake in regular round cake pans, so I don't see why you could not bake in 11x15 pan. You would need to double your recipe, Alton Brown from the Food Network has a recipe that is fab, and in my opinion is full proof.

You would need to line the bottom and sides of the pan with parchment and well buttered, bake your cookie or graham cracker crust, cool completely then fill with cheesecake filling, pan of water can be placed under the cheesecake pan directly or under a lower rack. Bake one hour @ 250 degrees, turn off oven and let sit in oven one more hour. then put in fridge for at least 6 hours...then this is what I do....I freeze the cheesecake in the pan, when frozen....remove parchment from the sides (may need to run a knife around the sides) by pulling the parchment up and away. then dip bottom of pan in warm water for a few seconds then turn pan out onto a wax paper or parchment lined cake board, remove bottom parchment then flip again onto cake board that the cheesecake will be presented on. Let cheesecake thaw in fridge.

Here is link to Alton Brown Video on his cheesecake.

Best of luck to you.
