I have two cookie recipes, one calls for the cookies to be baked at 400 degrees for 6-8 minutes. The other calls for the cookies to be baked at 375 for 8-10 minutes.

My question is, what is the difference? Will the lower temperature allow for a more even cooking of the cookie (as it would in a cake), leaving it softer?

Just wondering!

I bake my cookies for 10 minutes on the lower temp and they come out perfect everytime - and so soft. I've never tried a higher temp and a shorter time.
