What recipe did you use and did you like it?
I'm thinking chocolate cake, dark chocolate ganache and some kind of coconut filling. I saw one filling recipe that had marshmallows and coconut but wouldn't that squish out the side of the cake? What about a coconut and sweetened condensed milk filling...?
Any ideas would be appreciated!

I would make a coconut cake, with dark chocolate ganache and toasted crushed almonds between the layers. YUM!!!!!!!!
i dont have a coconut cake recipe, but i'd experiment with toba garretts yellow cake (i use it all the time- its delicious- google recipe) by adding shredded coconut and extract to the batter.
There is a cake called "volcano cake." The mixture of coconut and condensed milk are placed by spoonfuls into the cake mixture. It's usually baked in a 9x13 and the two come together and sort of spill over each other... but I digress... what I'm thinking is that the combo for the coconut would be good as your filling. I think they use coconut, condensed milk and powdered sugar.
here is a recipe for coconut pecan filling that is used in german choc cake, its really good. just omit the pecans and you have a thick gooey custard like coconut filling. i'd do coconut or dark chocolate cake and a dark choc ganache glaze.
That might be good! Ok so now I'm thinking dark chocolate cake, coconut frosting for german chocolate cake ( I'll torte the rounds to make 4 layers) and then covering the whole thing in dark chocolate ganache! Yummy! What do you think?
Should I do the ganache you pour over the cake or should I do a whipped ganache?
i'd pour it if its not a "decorated" cake. but then you'd need either buttercream or whipped ganache below it to prep the surface. vanilla swiss meringue buttercream is good under ganache

I've done this before, but I used coconut cake with chocolate fudge fillings. If you have a really dark chocolate cake, the flavor can overwhelm a coconut filling, so you might want to go with the coconut cake and a fudge or maybe a truffle filling. Yummy either way!
