I want to make a White Chocolate Mousse Filling for a chocolate cake with choc buttercream icing tomorrow. It uses whipping cream and instant white choc pudding mix, has anyone ever tried this, is it any good?

p.s. Does the cake, icing and filling sound like they go ok together? Thanks

Sorry for people who have to keep putting up with my questions lol

sound like a good combination, a little rich and decadent. I don't know about the recipe for for the mousse, I think you should post it. It sounds interesting, so I give you a bump.

yeh i am thinking it all might be a little too rich but i guess i'll just serve smaller slices lol If no one replies i'll just do it anyway see how it goes and if it tastes good then i'll post it...if it doesn't then oh no lol icon_smile.gif

...Oh i just found a recipe for a similar one in the recipe section, but that one adds in sugar which prob not best cose i think that would be a bit too sweet with this lol

I am thinking you should serve this with a nice cup of coffee or strong tea. I am also thinking you should post the dang recipe. Teasing people early in the morning with a great sounding cake and then no recipe icon_eek.gif I am an addict for new recipes and you won't share icon_cry.gificon_cry.gificon_lol.gificon_lol.gif

I make mock mousse all the time with the whipping cream and pudding mix. Personally I don't think the white chocolate pudding mix gives enough white chocolate flavor.

I would just make whipped white chocolate ganache. YUM! Or mix in some melted white chocolate with the pudding/whipping cream mix.

Thanks for chimming in Maryjsgirl! I had almost PM you for the answer. I seem to remember you talking about this some place before. Still after your hat! icon_lol.gif If you add the white chocolate to the pudding mix, will that help make if more stable, a bit firmer? The ganache would be a 3-1 ratio cool and then whip? I so am going to have to try this. I was thinking of doing a whip ganache (milk/dark) instead of BC. Very rich and very much decadent cake for a ladies group. I was thinking the ganache would be silky smooth and not so sweet like a BC. How would that work?

Actually just the pudding mix and whipping cream is very stable and firm. It doesn't break down like regular whipped cream does. I love the stuff! You can mix in anything much like the Rich's Bettercream like fruit curds, fruit filling in the sleeves, caramel, melted chocolates, cream cheese, etc. I've even use it as frosting for my own personal cakes, because I hate buttercream (with powdered sugar).

For whipped ganache I use a 2-1 ratio, I've never tried a 3-1. Or were you talking about the pudding/whipping cream mix?

I quess I am lost. I thought you used "real" dairy whip cream and pudding. I LOVE bettercream, whatever brand, whip topping for icing cakes. I had been planning on doing the chocolate cake with choclate ganache with mixed berries in a Grand Marnier folded in the topping and then simple syrup with Grande Marnier. The white chocolate mousse sounds so good though. When doing the white chocolate ganache to whip for icing, I use a 3-1 ratio. I don't know why, I guess that is just the way I learned. No, it is just whipping cream and dry pudding mix, lol. I was just saying it is a lot like the Bettercream in that you can add just about anything to it.

I think your combo sounds good!

OK, I tried the mock mousse. I used the white chocolate pudding mix and added some white chocolate to it. I took the scraps of the chocolate cake, the mousse and berries and made a triffle. It turned out so good, I am going to make the cake the same. Thanks for a new recipe!

Ahhh finally back on here lol

I was going to go dark choc ganache on this cake with molded choc flowers instead of the buttercream but the molding choc didn't work for me so i gave up on the whole cake lot and went in a different direction with the fillings/icings and i'll try the ganache again on another cake when i get my choc clay stuff to work!!! lol

p.s You wern't really hijacking the thread lol n doesn't matter anyway cose i ask questions sometimes on someone elses thread cose it just saves me starting a new one lol

Trying this today.... did u just add melted and cooled white chocolate to the cream and pudding mix for making a white chocolate mousse??
